Juan is a passionate chef dedicated to sharing his culinary skills. His expertise helps to train local teams to use their original traditions with new trends, which in turn creates new and exciting menu concepts.

He has worked in several continents including Asia, Europe, South America and the USA. He has worked with some of the best chefs in the world, managing different Michelin Star restaurants and hotels worldwide. After working as Executive Chef for international brands like InterContinental he joined our expert team and is now our Food & Beverage concept developer. During his career he appeared on numerous Gourmet Magazines and Food Network Television Shows (BBC) featuring his philosophies on the food industry.

Juan is our Culinary Director with over 15 years of experience and is in charge of the entire process, from the design and selection of the interiors to the creation of appropriate menus. He associates himself with the Slow Food Movement. He is currently located in Madrid supporting the opening of our new singular hotel “Posada del Dragon” and is similarly supporting in other overseas destinations.
